BOH 003: Kitchen Manager
You will work in close conjunction with other team members, including the other Kitchen Guru's, and you will have direct oversight of daily Culinary Prep, Line, Dish and Bakery Production. You will take an active part in coaching & training, Line and Prep cooks, who you will help ensure are maintaining the standards of the kitchen operations, food safety, FIFO, equipment and JBK processes. You will also ensure they are properly following Company policies, including but not limited to, Health & Safety, Reduction of Waste, Monitoring
Labor Costs based on volumes, Break Policy management and more.
This is a critical role at Just BE Kitchen and there are different requirements of this position.
Attached is a more detailed job description, but here are some highlights of the job for the purposes of this offer:
- Overall, set the optimal standard in terms of:
o Preparation o Cleanliness o Health & Safety o Plating and Finishing o Speed, Process & Efficiency of Food Being Executed o Reduce mistakes and waste of line operations o Training, with particular focus on line cooks, expediting and line processes o Support routine kitchen tasks such as setting up workstations and ingredients, so that food can be prepared according to recipes o Ordering, Inventory
Demonstrating Leadership:
- Coach, lead and mentor others in the kitchen. Ensure training is optimal for all positions in the Company and aim to ensure all employees feel supported and guided throughout all processes. –
- Demonstrate integrity with all kitchen personal and LEAD BY EXAMPLE.
- Set healthy boundaries with subordinates - correct wrong-doings, coach, train, discipline as needed but also use it as an opportunity for coaching and hold others accountable to their actions. This will be a daily and REGULAR task that needs attention
Catering Meals/Weekly Prepped Meals: Support these activities as needed.
Special Events/Boxes: Work on a rolling minimum 12 month view on special events and catering events so that we have a pipeline– eg. Thanksgiving, January etc for menu’s etc that are all food cost, etc. Think of always rolling these ahead where possible and again, ensure admin time is allocated so you can do this
Catering Duties: Own and execute and follow the agreed internal process on all catering orders and ensuring they are executed on time, to budget and to standards required for Just BE Kitchen, including working closely with Kitchen Guru/ Mentors to ensure all catering orders are executed effectively.
Creative Menu Development: Demonstrate Creative Talent, with Practical Implementation and Food Cost % for New Menu/Dishes Duties
General
- Create a working schedule based on the points above so that team members are adequately briefed and have all the tools needed to seamlessly execute initiatives.
- Develop and enhance your Leadership and Coaching to supervise and train other members of the BoH team. Coach others and lift them up where relevant.
- Leverage your role to bring ideas, efficiencies and to honor the requirements both financially and culturally of the business.
- Consistently monitor labor needs and revise schedules on the spot as needed to minimize labor and increase overall efficiencies.
- Watch food costs and ensure all of the responsibilities under your remit are always looking at waste, and food cost % - you will be tied to food cost percentages. If you see food not being accounted for - step in and stop it.
- Exceptional Health & Safety practices and hold team members accountable for compliance.
Expectations of Just BE Kitchen Guru/Sous Chef Roles
As a KM at Just BE Kitchen there are certain expectations that many not fit directly into your role but are still expected. Just BE Kitchen wants to support you in your leadership capacity and enable you to be empowered to conduct your tasks efficiently. Equally, there may be times when you are expected to do initiatives outside your written job role. Some of these expectations are listed below:
- You will be expected to take/make phone calls or texts within reason and as work requires to improve the flow of communication.
- You will be expected to check correspondence from senior managers or subordinates as needed to improve communication flow. A House Computer is provided if you do not have capacity on your phone or at home.
- You may be required to work outside your 40 hours/week, 8 hours/day shifts as work may be required and you will be compensated for this in overtime pay. At times if this is work that is chosen to do at home, then you can track your hours with an explanation of completed work, submit those admin hours on Slack and be compensated accordingly.
- You may be required to get tools, food/bev/test items, supplies or other materials that are necessary for your job that are not currently in house. You may keep the receipts for these items and be reimbursed as under the directives of our Expense Policy.
- From time to time in this business, you may walk into challenging, stressful, messy or disorganized situations. As a Kitchen Manager, you are expected to remain calm, trouble shoot and help the wider team, and return matters to an order of calm and efficiency.
- You are to be an example for other employees in terms of professionalism and demeanor. Attendance, timeliness, professional and supportive communication (to your superiors and wider team) & abstain from office “gossip” or drama is to be at a standard one would expect of managers.
- You are expected to be an example and to support the other peers at your level
- You are expected to demonstrate integrity and talk TO others about concerns and opportunities, not ABOUT others.
- You are expected to be an example in time management, ensure that you are taking both paid and unpaid breaks accordingly and yes, you have a voice to direct other members of the team to do so as well.
- It is expected that you work off our in-house software programs to drive initiatives forward. These are investments that the company has made and as a Supervisor, it is expected that you utilize these. These include but are not limited to: TOAST, MARGIN EDGE, DROPBOX, R365, GOOGLE DRIVE & SHEETS, 7 SHIFTS and any other implemented systems required for team success.
- It is expected that when deadlines are set for roll-outs, promotions and production – that these are met.
This is a required aspect of all roles.
- It is expected that all recipes, content, processes, lists and others are stored on the Office Computer and saved in appropriate DropBox folders. (refer to the company’s IP protocols, trade dress and NDA as well)
- You are expected to adhere to the company’s trade dress policy and will incur possible legal ramifications if you choose not to.
- You may be asked from time to time to participate in candidate screening, set-up, interviews and stages.
If you have a direct line report, this is part of your job description. If you do not have direct reports, you will be expected to participate, at times, in the recruitment process and be prepared to host and welcome stages.
- You are expected to follow-through on what you say you will do.
- You are expected to be a support for senior managers. Consideration of their workloads & scheduling should be adhered and respected.
- As a Kitchen Manager you will need to have a flexible schedule to work with the ongoing “surprises” this industry brings – the Company will make every endeavor to get to a routine schedule but this can not be guaranteed from week to week and it’s a give and take situation.
Compensation and Other
- You will be paid on a bi-weekly basis as a salaried employee at 55 K annually
