PURPOSE
FLSA Classification: Exempt
The Sous Chef will assist the Chef in managing daily kitchen operations, help train kitchen staff, and prepare and coordinate the preparation of food ordered by guests.
ESSENTIAL DUTIES & RESPONSIBILITIES
- Assist Chef in training of kitchen and back-of-house staff.
- Assess staff performance on an ongoing basis and report any performance issues to the Chef.
- Assist Chef with employment actions, including discipline and termination of employees inaccordance with company policy.
- Ensures that food, presentation, and plating are of the highest quality and are prepared safely,efficiently, and according to specifications or request.
- Assure adherence to all standards of food quality, preparation, recipes, and presentation inconjunction with their specifications.
- Ensures kitchen runs in accordance with all applicable health, safety, and hygiene codes andstandards.
- Monitors food and labor costs to remain within set goals.
- Maintains and inspects kitchen equipment, recommending repairs or replacements as needed.
- Assumes the role of Chef in their absence.
- Performs other related duties as assigned.
REQUIRED KNOWLEDGE/SKILLS/ABILITIES
- Ability to produce an excellent culinary and restaurant experience for guests.
- Ability to take direction and work collaboratively.
- Excellent verbal and written communication skills.
- Excellent time management, scheduling, managerial, and organizational skills.
- Excellent interpersonal skills with the ability to work well with a variety of personalities andunder pressure.
- Understanding of financials and cost control.
QUALIFICATIONS/EDUCATION:
- Relevant experience or training, which may be demonstrated via degree or certificate, completion of apprenticeship, or other experience necessary to become trained as a highly skilled professional chef.
- 2+ years of culinary managerial experience required.
- Experience in training and development preferred.
